The Yale Sustainable Food Program is inviting Jorge Rausch, an ecologist and chef from Colombia to visit Yale from September 19-22.
In Colombia, Rausch is known to boost an ecological and social responsibility campaign to fish and consume invasive species including lionfish. Rausch has also worked for the inclusion of lionfish in Colombians’ diet, establishing alliances with organizations such as Conservation International. His restaurant is ranked as the 18th best restaurant in Latin America and the best in Colombia. He has also worked in Michelin starred restaurants in Europe and participated in MasterChef twice!
